Espresso for Mint

Due to my limbo with the chocolate mint cookie recipe, I decided upon a chocolate espresso cap as a replacement for impending cookie exchange. I don't know if it will appease the masses hoping for the "other" cookie, but I think it is a good attempt. The dough came together easy enough especially with the loaner Kitchenaide (I really need to get one for real). Don't really want to admit that I made two trips to Super Target in order to collect all the ingredients. I am the first one to own to up to the fact that I am a target junkie, but twice in one day is a little much. The cold and snow kept me from straying too far and making it to a more legitmate food shopping experience. :)
